This month, Chef focused on seafood items inspired by Lent. The shrimp and fish come from Blue Horizon Seafood where we get the freshest of the fresh! The Hamachi and Japanese Madai Snapper are caught in Japan and flown in the same day that they are plucked from the ocean!
