Join Chef Eduardo for his delectable take on the national dish of Mexico: Chiles en Nogada. Savory beef inside a roasted poblano pepper, topped with a walnut cream sauce and pomegranate seeds; this dish provides multiple layers of flavors to pair with our flight of 4 wines from the up-and-coming wine regions of Mexico.
The first grapes planted in North America were planted on Mexican soil. Close to the 30th parallel, long considered to be the southern border for premium viticulture, the grape vines in Mexico thrive in the high elevation and arid climates of the loamy clay soils. From sparkling wines to Sauvignon Blancs, Malbecs, Cabernets, and a host of other Mediterranean varietals, Mexican winemakers are experimenting and finding success in fine wine production!
